Sweet and subtle, Chef Darren Johns’ Signature Forbidden Rice is a refreshing and elegant finisher to any meal. The definition of simplicity, this dessert treat requires only four ingredients to make.

Signature Forbidden Rice
3 cups hot cooked USA long grain rice 750 mL
2 cups coconut milk 500 mL
2 tbsp granulated sugar 30 mL
4 tsp mirin (Japanese sweet rice vinegar) 20 mL

In a bowl, combine hot cooked rice, coconut milk, sugar and mirin. Allow to cool for 10 minutes. Rice will thicken slightly.

Serve in martini glass with a Thai basil sprig for garnish.

Makes 6 servings.
