Asian Chicken Wrap
19 lbs chicken, cooked 8.6 kg
6-1/4 cups hoisin sauce 1.55 L

In large bowl, combine chicken and hoisin sauce: mix well to coat. Reserve.

6-1/4 quarts U.S. long grain white rice, cooked, cooled 6.25 L

Reserve.

100 flour tortillas (12 inch [30cm] diameter) 100
4 lbs iceberg lettuce, shredded 2 kg
5 lbs carrots, shredded 2.3 kg

Warm tortillas until pliable. To serve, place tortillas on work surface and fill with 1/4 cup (50 mL) shredded lettuce, 1/4 cup (50 mL) shredded carrots, 1/2 cup (125 mL) rice and 3 oz (75 g) chicken mixture. Wrap by folding in the sides of the tortilla, then rolling the bottom edge toward the centre until the tortilla is fully wrapped.

Tip: Any white or brown rice can be used in this recipe
